Kerala Ghee Rice / Ney Choru Recipe

Kerala Ghee Rice / Ney Choru Recipe:



 Famous Malabar style ghee rice - :  Rice roasted and cooked with ghee and spices.  Quick and easy to prepare. Best served with chicken curry.




Serves: 4

Ingredints:

Jeerakasala / Wayanadan kaima rice : 2 cups
Ghee : 3 tbsp
Onion : 1 (medium, sliced)
Water : 4 cups
Cardamom : 3 nos
Cinnamon  : 2 pieces
Cloves  : 4 nos
Bay Leaves  : 1 leaves
Fennel seeds - pinch
Salt to taste




For Garnishing :

Cashews – 1/4 cup
Raisins – 1/4 cup
Fried Red Onions – 1/2 cup

Method of Preparation:

1.Wash the rice well and soak it for for one hour.



2.Heat  ghee in a deep pan add fennel seeds, cinnamon, bay leaves, cardamom, cloves and star anise. Saute for 2-3 minutes till fragrant.



3.Add onions and saute until golden brown.



4.Add the drained rice to the pan and stir fry for 5-7 minutes Add water to the pan along with salt and mix well. Bring it to a boil.


5.Then reduce heat to medium low and cover the pan with a tight lid. Cook for around 10 minutes until the rice is cooked and all water has been absorbed.



6.Switch off the stove and keep the rice covered for another 8 -10 minutes.
7.Garnish with fried onions, cashews & raisins.



   Serve with  Chicken Curry
