Easy Vegetable  Fried  Rice For Lunch Box:)




Ingredients:

Jasmin  rice or Jeerakasala rice (cooked) - 2 cups
Ginger /Garlic paste   - 1 tsp
 Celery - 2 tbsp
Spring onion green (chopped )- 2 tbsp
Carrot - 4tbsp
Cabbage-3 tbsp
Bell pepper - 3 tbsp
Green peas(frozen) - 2 tbsp
Soya sauce- 1 tsp
Tomato ketchup  - 1 tsp
Green Chilli Sauce - 2 tbsp
Black pepper powder -2tsp
Salt - to taste
sesame oil- as required


Method of Preparation:

1.Heat oil in a pan , add Ginger garlic paste , and celery , Saute for about 20 to 30 seconds..
2.Next add the chopped vegetables and stir fry over high flame for few minutes.



3 Add Curshed black pepper and saute it well.




4. Now add Cooked rice along with  soya sauce, Green chilli sauce ,Tomato ketchup and black    pepper powder and salt to taste.Mix well until combined.









5.Finally add the spring onion greens and switch off the stove.




            Serve with  Raita  and pickle 😋😋😋

Kerala Thattukada special Dosa and Red  Coconut Chutney


Thattukada special Dosa

Ingredients:

Idli  rice - 3cup
Urad dal(Uzhunnu) - 1 1/2 cup
Fenugreek - 20 to 25 nos
White Poha - 1/2 cup
Water
Salt





Method of preparation:

1.Soak the Rice and  black gram overnight. Clean it and grind it with phoha  in fine paste .




2.Add required amount of water to make a thick batter (not too thick).






3. keep the batter in a warm place. overnight or for 7-8 hours for fermentation.Once the batter rises, stir it well.


4. Now this is ready for preparing dosa. .Add salt and mix well..



5.Heat a non stick tawa/cast-iron tawa, grease it with oil
6.pour it in the center of the tawa and spread it a circular motion. when the bubbles is come it will ready to turn over .



7.when it turns light golden brown, turn over to other side and remove with spatula when crisp.




      Tasty Thattukada dosa serve with chutney😋😋😋




Red  Coconut Chutney


ingredients:

Coconut -2 cup
Shallots -3 nos
Chilly powder -  1 tsp
Green chilli -1 no
Mustard seeds
Dried Chilli - 2 nos
Curry leaves
Water
Salt
Coconut Oil - 1 tbsp



Method of preparation:

1.Grind together coconut, chopped shallots and chilly powder and green chilli with required amount of water. 



2.Heat oil in a pan and add mustard seeds, chopped shallots , Dried Chili and curry leaves.
 saute in low flame till it becomes brownish in color.



3.Add it with  grounded chammanthi and salt into this and mix well.Do not over boil it.




                  Serve coconut chutney with dosa.

Trivandrum Style Fish Curry/ Thenga Aracha Meen Curry 

This is a famous and very common fish curry in Trivandrum  area.This is prepared using fresh coconut paste.Coconut should be ground as smooth as possible to get a better taste.
used to prepare a vegetarian version of this curry. Just go with the same procedure and do not add fish. 


Ingredients:

Avoli/Black Promphet : 500g
Tomatoes : 1 no.
Green chillies : 3-4 nos.
Ginger (small pieces) : 3-4
Shallots - 2 nos
Drumstick - 4 nos(optional)
Grated Coconut - 1 cup
Chilli Powder : 2 tbsp
Coriander powder : 1 tbsp
Turmeric : 1 tsp
Tamarind(Vaalan Puli)- Lime size
fenugreek a pinch
Curry leaves : A few
Salt : to taste
Water : 5 glasses


Method of Preparation:

1.In  mud vessel (would be the best) add Cut fish to small pieces and wash thoroughly and keep it aside.
2.Add green chili ,Drumstick in length wise and tomatoes to cube size, mix with fish and keep it aside.

3.Grind coconut by adding chilli powder,Coriander powder, turmeric ,tamarind ,shallots ,and ginger and 1-2 cups of water and make a very smooth paste.







4.Add coconut paste in fish , and also rest of the water and mix well. 






5.Switch on a medium flame and  cook fish curry for 10 mins then add  a pinch fenugreek powder.



6.You may need to cook for 10-15 minutes or till the gravy is thick. 



7.Switch off the flame and add some curry leaves.



8.sprinkle some coconut oil on the gravy.




Tasty  fish curry is served best with rice or kappa:)😋😋😋

Puran Poli – Sweet Flatbread Recipe

Puran Poli – Sweet Flatbread



Ingredients:

Split Bengal gram (chana dal)- 1 cups.
Jaggery (grated) - 1 1/2 cups.
Sugar - tbsp
cardamom powder -1/4 tsp.

For the dough:

Whole Wheat Flour(Atta)- 1 1/2 cup
Salt- to taste
Oil - 1 tbsp


Method of Preparation:

1.Wash and boil chana dal. Drain and coarsely grind it.



2.In a pan add the dal, grated jaggery, Sugar, cardamom powder and mix well.





3.Cook, the above mix till dry. 



4.It should resemble a soft ball. Remove and cool. 



4.Mix Flour and salt. Add three tablespoons of Oil  and sufficient water to make a soft  Chapatti dough.keep aside for one hour.


5.Divide dough roll into balls.Flatten each ball in your palm, stuff with one portion of puran (stuffing), cover and seal the edges.






6.Heat a tawa and cook puran poli  and sprinkle oil on top until done on both sides.



 Serve hot pure ghee on it and cold milk.😋😋😋👌👌👌:)
