Aviyal – Avial Recipe – Kerala Sadya
Ingredients :
Raw Banana /Pachakaya : 2 no
Drumstick : 2 nos,
Amarakaya :1/4 cup
Carrot : 1 cup
Velarikka : 1 cup
Potato - 2 no(medium size)
Onion - 1 no(medium size)
Pumpkin - 1/2 cup
Green Chillies - 2 no
curd : 3 tbsp
Turmeric powder : 1/2 tsp
Coconut: 1 cup
Gralic - 2 no
Cumin seeds: 1/2 tsp
Curry leaves : 1 sprig
Coconut oil : 1 tbsp
Salt to taste
Method of Preparation:
1. Peel and cut vegetables lengthwise into 2″ pieces long (stick shape).
2. Grind coconut, Garlic,Green chilly and cumin seeds into a coarsely paste with little water.
3. Wash, cover and cook vegetables with 1/4 cup water, along with salt to taste till the veggies are half cooked. (Do not over cook the veggies.)
4. Make a small well in the middle of the half cooked veggies and pour the ground coconut paste into it,Cover the pot and cook for 5 mins.
5. Cook on low heat for few more minutes till the veggies are well cooked, Take care not to mash the vegetables.
6. To this add the curd and warm it (Donot allow it to boil) and keep stirring.
7. Take it out from the stove and add the coconut oil and the curry leaves, keep stirring.
8. Add the curry leaves and pour coconut oil over the top and cover the pot and mix well.
Serve it with rice 😊😊😊
