Kerala Style Chicken Cutlet Recipe

Kerala Style Chicken Cutlet Recipe





Ingredients:

Chicken (boneless)- 1 lb
Turmeric powder- 1/4 tsp
Pepper powder - 1 tsp
Fennel powder- 1 tsp
Garam Masala- 1 tsp
Salt- to taste
Potatoes boiled and mashed - 2
Onion -  1 /2 cup ( finely chopped)
Ginger Garlic paste- 1 tbsp
Green chilies- 3 (finely chopped)
Oil- 1 tbsp
Cilantro chopped-1/4 cup
Salt-to taste

For Frying Cutlets:

Eggs beaten - 1
Bread crumbs plain-1 cup (I used fresh Bread crumbs)
Oil- enough for frying

Method of Preparation:

1.Cook the potatoes in pressure cooker in 1 whistle. peel and mash it. Keep it aside.


2.wash and Cut the chicken into small pieces .Cook the chicken along with turmeric powder,pepper and salt and  water cook covered in a saucepan in a medium flame.
3.When done  drain and keep aside to cool. Chope the chicken and keep aside .



4.Heat a oil in a pan add Add onions,ginger garlic,green chilies and salt and saute till translucent.


5.Then add turmeric powder,pepper powder, garam masala, saute for a few minutes.


6.Add the boiled, mashed up potatoes and mix everything well.


7.Now add the cooked and shredded meat, combine well.


8.Finally, add cilantro, and fennel seed give it a mix.


9.Remove from the heat, let the mixture cool down.
10.Make medium sized balls out of this mixture, flatten it in between the palm of your hands, keep aside in 15 mints.


11.Beat the eggs using a fork. 
12.Use dry or leftover bread. break the bread into 3-4 pieces and blend it in a mixer or blender or food processor until coarse.


 13.Spread the bread crumbs on a plate.
14.Dip each cutlet ball in the egg first and then evenly coat it with the bread crumbs.





15.Deep fry the cutlets in oil until golden brown.




                    Serve along with Tomato ketchup or your favorite dipping sauce

Paniyaram Recipe

Paniyaram / Kuzhi paniyaram Recipe:





Ingredients:

Leftover idli/ dosa batter - 2 cups
Green chilli - 2 nos (Chopped)
Ginger - 1 tsp (Finely Chopped)
Curry leaves - Few
Salt - to taste
Water - very little if batter is thick

Method of Preparation:

1.Take the dosa batter in a bowl.


2.Then add ginger,green chili,curry leaves and salt mix well.



3.Add little water if its too thick.



4.Heat paniyaram pan with 1 tsp oil in each hole.



5.Pour the batter to fill the mold.Cover the pan . Cook for a minute.






6.Cook both sides when it has become crispy and golden on both sides.and remove.




     Serve with coconut chutney .... And Enjoy!!!

Brinjal / Egg Plant Fry - Spicy Vazhuthanaga Fry Recipe:




Ingredients:

Brinjal - 1 medium size
Turmeric powder - 1 tsp
Kashmir chili powder - 1 tbsp
Red chili powder - 1/2 tsp
Garam masala - 1/2 tsp
Fennel seeds - 1/2 tsp
Pepper powder - 1/2 tsp
Curry leaves - plenty
Salt - to taste
Warm Water - 1 tbsp


Method of Preparation:

1.Wash and cut brinjal into medium size  rounds.




2.In a bowl add masalas along with water and mix it well. 



3.Marinate the paste on both sides of the egg plant and set aside for 20 minutes. 



4.Heat oil in a pan and add curry leaves.
5.Place brinjal slices at a time and cook in medium flame on both sides until becomes golden brown.




6.Transfer to a tissue paper once down and serve hot along with rice.

Soya Bean (Soya chunks) Masala Recipe

Soya Bean Masala  Recipe:




Ingredients:

Soya bean - 1 cup
Potato - 1/2 cup
Onion (sliced) – 1 medium
Tomato (sliced) – 1 large
Green Chillies – 3 nos
Ginger Paste -1 tsp
Garlic Paste – 1 tsp
Turmeric Powder – 1/2 tsp
Red chilly powder – 2 tsp
Coriander Powder – 1 tsp
Pepper Powder – 1/2 tsp
Garam masala - 1 tsp
Fennel seed powder - 1/2 tsp
Cloves - 3nos
Coriander leaves  – A few
Oil – 2 tbsp
Mustard Seeds – 1/2 tsp
Salt – As required
Water – As required

Method of Preparation :

1.Wash and Soak the Soya chunks in hot water for around 15 minutes. Squeeze out the water and cut the chunks into pieces.



2.Heat oil in a wok and splutter mustard seeds.Add sliced onions,green chilies and ginger garlic paste and saute till the onions are translucent.





3.Add  turmeric powder,chilly powder,coriander powder,pepper powder, garam masala and stir fry for a few minutes.
4.Then add chopped tomatoes and curry leaves and saute till the tomatoes are cooked mashy.



5.Add the soya chunks and potatoes along with and some salt and fennel powder mix well .




6.Add some water Cover and cook for another 15-20 minutes.



7.Sprinkle some cilantro leaves and mix well gravy becomes thick.




Serve along with chappathi , naan.... And Enjoy!!! 😋😋😋
