Unniyappam / Traditional Kerala Sweet Rice Snack - Recipe:
Ingredients :
Raw Rice - 1 cup (I used Idly Rice)
Ripe Small Bananas - 2 nos
Jaggery - 250 grms (1 cup )
Coconut bits /Thenga kothu - 1/4 cup
Cardamom powder - 1/4 tsp
Salt - one pinch
Ghee - 1 tbsp
Coconut Oil for frying
Water - 1/2 cup
Method of Preparation:
1. Soak the raw rice in water for about 6 hours,
2.Add water to jaggery and melt it. Strain the jaggery and let it cool completely.
3.Drain the water from the rice and grind the rice along with jaggery syrup to a smooth paste and pour it.(till you get the consistency of idli batter)
4. Grind the bananas add 2 tbsp of melted jaggery to the smooth paste. and pour in to the batter.
5. Allow to ferment for 8 hours in a warm place .
7. Fry the coconut bits in ghee till it become light brown in color.
8. Add fried coconut bites,Cardamom powder,baking soda and salt to the batter and mix well.
9.Heat oil is paniyaram pan /unniyappam mould , and when the oil is hot, lower the flame to medium.
10. Drop tablespoons of batter to the pan and fill the pits with the batter.
11.When the bottom get a golden dark brown, turn the unniyappam with a spoon and cook the other side too.
12. Once cooked, remove and drain on a kitchen towel.
Serve With Evening Tea And Enjoy!!!
