Rava Payasam / sooji kheer recipe:



Rava Payasam,a South Indian sweet dish recipe ....



Ingredients:

Rava(Sooji) – 1 cup
Sugar – 1/2 cup (5 tbsp)
Milk – 2 cups
Ghee – 2 tsp
Water – 1/2 cup
Cardamom powder – 1/4 tsp
Cashews – 8 nos
Raisins – 10 to 15 nos




Method of Preparation:

1.Heat ghee in a kadai fry cashews and raisins untill golden color,set aside.



2.In the same kadai add rava and roast it slightly,when the aroma comes.





3.Then add  water and 1 1/2 milk along with roasted rava and heat it medium flame and Keep mixing and cook till rava becomes soft.



4.Now add sugar mix very well to avoid lumps.


5.Then add remaining milk, add cardamom powder and mix well.Finally add ghee fried cashews,raisins and mix well.




 As it cools down, it gets thickened. So add warm milk as needed.
           Serve rava kheer hot.... And Enjoy!!!....😊😊😊

Amarakka /Amarapayar thoran / Cluster Beans Coconut Stir Fry 



Ingredients

Amarakka (Cluster Beans ) - 250 gm
Onion / Shallots - 1/2 cup (Chopped)
Green chili - 1 nos (Chopped)
Coconut oil - 1 tbsp
Mustard seeds- 1/2 tsp
Whole dry Red chilli- 2 nos
Curry leaves- Plenty
Warm Water- 1/4 cup
Salt- to taste


To Grind

Grated Coconut- 1/2  cup
Garlic - 2 cloves
Cumin seeds- 1/2 tsp
Turmeric powder- 1/4 tsp

Method of Preparation:

1.Wash and clean amarakka and cut .Cut both the ends and also pull out strings, chopped finely.



2.Grind the coconut, along with garlic, cumin seeds and turmeric powder,and red chili powder. Keep aside.
3.Place a heavy  pan over medium heat, add oil, mustard seeds, let it splutter,whole dry red chili and curry leaves.
4.Then add onion, with salt and saute till translucent.
5.Add cluster beans and add water, cook covered till cluster beans have turned Soft.



6. Add the ground coconut mix to the cooked cluster beans, combine well and cook for a few minutes till the raw smell goes away and the mixture gets dry.



                   Serve as a side dish with rice...And Enjoy!!!

Vattayappam / Steamed Rice Cake Kerala Style Recipe

Vattayappam / Steamed Rice Cake  Kerala Style Recipe:






Ingredients:

Idly rice - 1 cup
Cooked rice / poha  - 1/2 cup
Grated Coconut  - 1 cup
Instant Yeast - 1/2 tsp
Sugar : 1/4 cup or to taste
Raisins and Cashewnut : 8 to 10 nos
Cardamom powder - 1/4 tsp
Salt - to taste
Ghee/Butter : 1 tsp


Method of Preparation:

1.Wash and soak the  rice in the water for 3 hours and drain.and keep it aside.
2.Grind the rice along with  grated coconut and poha by adding water to fine paste and keep it aside. 
3.In a small bowl add  yeast,sugar and  warm water for 10-15 minutes till its forth.
4.Then add the sugar syrup,  into the fermented batter and mix well. Cover and allow to ferment 8 hrs.
5. Add salt cardamom powder and keep aside for 30 minutes.



6.Grease the stainless steel flat plate or idly mould with ghee/butter and pour the batter to the plate.





7.Place it in the steamer, cook for about 15 minutes,when its half done, open and add the rasinis, cashews and cardamom,on the top and steam again for 10 or till done or until an inserted toothpick comes out clean.







8.Remove the pan from steamer and allow to cool. Once cooled, pull it out from the pan by slowly pulling the edges using a knife or spoon.



Cut into desired shape and serve.

Vazhuthananga Mezhukkupuratti / Brinjal / Eggplant Stir Fry 




Ingredients :

Vazhuthananga : 1 Cup ( I used Indian eggplant)
Onion / Shallots : 1/2 cup (Sliced)
Turmeric Powder : A pinch
Curry Leaves : 2 springs
Green Chili - 2 nos   
Coconut Oil -1 tbsp
Salt to taste



Method of Preparation :

1.Slice  eggplant into medium thick pieces and keep it aside.


2.Heat oil in cast iron  pan and add sliced brinjal along with onion and curry leaves and,saute for 5 minutes on medium flame.



3.Then add turmeric powder ,salt and saute till the raw smell goes.



4.Cover and cook in medium flame for another 5 minutes.



5.Open the lid,put on high flame  stirring frequently for a minutes.



          Switch off the flame.. And Server with hot Rice .... And Enjoy!!!

Vazhakoombu (Banana Flower ) Cutlet Healthy Kerala Snack Recipe:





Ingredients:

Vazha chundu(Banana flower)- 1 no.
Bread Crumbs - 1 cup
All purpose flour (Maida)  - 3/4  cup
Potato(Boiled) - 1 no.
Onion - 1/2 cup
Ginger - 1 tsp 
Garlic  - 1 tsp   
Green Chilies - 2 nos(Chopped).
Pepper Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Coriander Leaves - 2 stick(chopped)
Salt to taste   
Oil for deep frying 

Method of Preparartion :

1.Remove the outer Layers of banana flower until you find the pale color neat layer .



2.Then Chop the banana flowers and place in a large bowlful and rub with oil it remove the stigmas and keep it aside.



3.Heat oil in a pan and add chopped onion, ginger, garlic, and green chilli fry for few minutes until its golden brown in color.
4.Add the chopped banana blossom stir thoroughly close the pan on  the medium  heat and let it cook for 10 minutes.


5.Then add cooked and mashed along with garam masala , pepper powder , coriander leaves and salt mix and combined well and cook or 5 minutes.



6.Switch off the flame and When the mixture is cool, and adding little bread crumbs while mixing and make a smooth dough.



7. Make lemon sized balls, mix and shape it into oval shaped cutlets and keep it aside.



8. Mix maida with little pepper powder,salt and add water to make a thin batter.




9. Dip the cutlets in maida batter then coat it with bread crumbs and keep it refrigerate in 1 hour it will get more crispness.


10.Heat oil in a pan and fry the cutlet(can also shallow fry it) till golden brown.



  Serve hot with sauce And Enjoy!!!
