VazhaKoombu /VazhaChundu Thoran / Banana Flower Stir Fry Recipe :
Kerala Traditional side dish for lunch .....
Ingredients:
Banana flower - 1 no
shallots /onion - 1/4 cup ( Chopped)
Green chili - 2 nos(Chopped)
coconut oil - 1 tbsp
Dried red chili - 2 nos
Curry leaves - plenty
Mustard seeds - 1/4 tsp
For Grinding:
Grated coconut - 3 tbsp
Turmeric powder - 1/2 tsp
Cumin seed - 1/4 tsp
Garlic - 1 no
Method of Preparation:
1.Remove the outer Layers of banana flower until you find the pale color neat layer .
2.Then Chop the banana flowers and place in a large bowlful and rub with oil it remove the stigmas and keep it aside.
3.Now Grind the coconut along with turmeric,cumin seed,and garlic without adding any water.
4.Heat oil in a skillet or deep pan ,splutter mustard seeds then add the split urad dal and fry until golden brown then add red chili , and Curry leaves .
5.Now add the chopped banana flowers, curry leaves, and some salt Stir well until combined.cover with a lid and cook in a medium flame.
6.Open the lid, add the ground coconut mixture, mix well, and cook again covered for another 10 minutes sprinkle more water as needed Cook covered on very low flame.
7.Once the banana flowers are completely cooked, switch off the heat,
Serve hot with rice and Dal curry
