Kerala Vegetable Stew - Side Dish for Appam / Idiyappam


Serves: 3  people 

Ingredients:

Potato - 1 medium (cut into cube size)
Carrot- 1 medium (cut into cube size)
Onion - 1 medium (Sliced)
Green peas -1/2 cup
Cardamom-2 nos
Cloves-2 nos
Whole black pepper- 1tbsp (Crushed)
Garam masala - 1/2 tsp
Ginger/Garlic - 1tsp (chopped)
Green chilies- 2 nos
Curry leaves-2 sprigs
Thin coconut milk-1 cup
Thick coconut milk-1/2 cup
Coconut oil - 1 tbsp
Salt-to taste
Method of Preparation:

1.Wash and chop the vegetables in cube sized and  keep it aside .



2.Heat  in a pressure cooker add chopped  vegetables,Ginger, garlic ,Green chilies, and mix well .



3.Add  thin coconut milk.Add salt,black pepper, gar am masala and mix well.Cover and cook until done  for one whistle.

4.Remove the lid , add thick coconut milk and  crushed black pepper and cook for few more minutes.








5.Heat Coconut oil  in a pan,add mustard seeds when its splutter add cardamon , cloves and curry leaves and saute for few seconds.Add this to the vegetable stew and stir gently.



                        serve with appam/idiyappam.
