Kappalandi Mittayi / Peanut Candy  Kerala Recipe





Kappalandi mittai is a  famous sweet of India ...



Ingredients:

Peanuts (Kappalandi) - 1 cup (250 gm)
Jaggery  / Brown sugar - 1 cup
water  - 1/2 cup
salt a pinch


Method of Peparation:

1.Heat a pan in medium low heat,  add peanuts until roasted and lightly golden brown here and there for about 5 minutes.and keep it aside and allow to cool.




2.Then rub it constantly with your palms to remove the skin. Then crush them coarsely in a mortar and pestle (Idikallu)  / food processor. Set aside.







3.Heat a pan over medium heat. Add  jaggery,  water and salt. Once it is melted completely, strain it to remove the impurities.





4.Then  heat the strained jaggery over medium low heat add in peanuts and toss well until the peanuts are well coated with the jaggery  and Remove from heat. 





5.And  spread it over a baking pan or  parchment paper and  roll it evenly using a thick cake cutter.and let it cool.



6. After cooling cut it into desired shape And  store it in an airtight container.
