Eggs - 2 nos Shallots - 3 tbsp (Finely chopped) Green chilies - 2 nos (Finely chopped) Grated coconut - 1 tbsp Curry leaves - 1/2 tsp (Finely chopped) Coriander leaves - 1 tsp(Finely chopped) Turmeric powder - 1/4 tsp Chili powder - a pinch Black pepper - 1 tsp (Crushed) Warm water/ milk - 1 tsp Salt - to taste Coconut oil - 1 tbsp
Method of Preparation:
1. Wash and Crack two eggs in a mixing bowl Bowl then add along with all the ingredients mentioned above.
2.Beat the eggs thoroughly and combined well.
3.Take a cast iron pan and put medium heat pour the coconut oil and spread in every side. 4.When it gets heated Pour the egg mixture and let is cook for a minute.(Don't cover with lid)
5.Then Turn the omelette and cook the other side. Once it turn light golden color, remove carefully with a flat spatula

Ingredients: For marination: Chicken - 1 kg(cut into medium sized pieces) Turmeric powder - 1/2 tsp Chilly-powder - 1/2 tsp
For roasting: Coconut (grated) - 1 cup Chillypowder - 1 tbsp Corianderpowder - 1 1/2 tbsp Turmericpowder - 1/2 tsp Coconut (grated) - 1 cup Shallots(Kunjulli) - 2 nos Garlic cloves - 3 nos Ginger - 2 nos(Cut into small pieces) Whole Pepper - 2 tsp Fennelseeds (Perumjeerakam) - 1 tsp Garam masala - 1 tsp onion - 2 nos Tomato - 1 small Greenchillies - 3 nos(chopped) Ginger & garlic paste - 1 tbsp Coconut Oil - 2 tbsp Curry leaves - Plenty Salt - As reqd
Method of Preparation:
1. Wash and cut the chicken pieces then marinate it with chilly powder, turmeric powder, and required salt for one hour.
2.In thick kadai Dry roast the shallots, garlic cloves, grated coconut,Pepper,fennel seed and curry leaves until the coconut turns golden brown in colour.
3.Put the low flame add chilly powder, coriander, turmeric saute until the raw smell goes.
4.Turn off the flame and allow to cooling and then grind firmly by adding little water.
5.Heat oil in a kadai add mustard seeds when it starts splutter add onions and green chilies ,ginger garlic paste and curry leaves.
6.Then, When the color changes to slight brown,add tomatoes and mix well.
7.When it starts to boil,Then add the marinated chicken pieces along with the ground coconut paste into the kadai. and cover with a lid.and cook in 10 to 15 mints in medium flame.
8.When the chicken is cooked well,spread some pepper powder, garam masala and curry leaves on top.cook uncovered until the gravy reaches desired consistency.
9.Turn off heat serve and Enjoy
Serve with Porrotta ,chappathi and appam ,Idiyappam And Enjoy!!!

1.Beat the eggs with a fork or whisk until thoroughly yolks and whites are totally combined. 2.Then add milk,cheese,Black pepper,and salt mix well.and keep it aside in 5 mints.
3.Heat butter in a pan pour the egg mixture.and turn the heat very low flame.
4.Use spatula to push the eggs from one side of the skillet to the other and re-flooding repeatedly.
5.Repeat motion to continue to scramble the eggs until most are cooked.
6.Turn Off the heat and sprinkle crushed pepper on the top of it .

Ingredients:
Quinoa -1 cup (160 ml) (I used Tri color quinoa) Onion -1/3 cup (chopped) Green chili -2 nos (chopped) ginger - 1/2 tsp Raw Peanut - 10 to 15 nos Urad dal - 1 tsp Raisins - 1 tbsp Musturd seed - 1/4 tsp Dried red chilies- 2 nos Curry leaves - few Salt -1 tsp flat or as needed Oil -1 tbsp Warm water - 2 cup(160 ml) Ghee - 1 tsp Method of Preparation: 1.Wash and soak Quinoa in 20 mints.drain and keep it aside.
2.Heat oil in a pan, add mustard seeds, when it splutters, add urad dal,peanut,raisins.When its turns golden brown, add red chillies,and curry leaves.
3. Add chopped onions, green chili, ginger and saute until onions turn transparent.( If you need more vegetables use carrot,Peas,Corn and bell pepper )
4.Then Add 2 cups of water and needed salt cook covered.
5.When water starts boiling, reduce the flame and add the quinoa. Cook covered on medium to low flame. Stir once in between.
6. Add some Fresh corn on it.
7. After 15 minutes. Once all the water has evaporated, turn off the heat,spread ghee on the top and mix well
