Kerala Mutton Curry Recipe
How to Prepare Kerala Style Nadan Mutton Curry :
Ingredients:
Mutton(Tender) - 1 lb
Shallots - 20 nos(Cut into small size)
Ginger/Garlic - 1 tbs(Crushed)
Tomato- medium
Green chili- 2 Nos
Turmeric powder-1/4 tsp
Kashmeeri chili powder- 1.5 tbsp
Coriander powder-1 tbs
Garam masala- 1 tsp
Fennel seeds/Permjeerakam- 1/2 tablespoon
Pepper powder- 1/2 tbsp
Cloves- 2
Cinnamon- 1 small stick
Cardamom- 2
Bay leaves - 2
Coconut oil- as required
Curry leaves- plenty
Salt- to taste
Method of Preparation:
1.Heat oil in a pressure cooker Saute cinnamon,cloves,cardamom for minutes.
2 . Add sliced onion,green chilly and saute until it turns translucent.add ginger- garlic paste and saute well.
3.Add sliced tomatoes and saute until it turns soft.
4.Add mutton pieces and mix well,add masala powders saute for 5 minutes in medium to low flame.
5.Add curry leaves and salt mix well.
6.Close the cooker and let it cook for 1 whistles.
7.Switch off the flame now,Open the cooker when the steam releases completely.
8.Cook on low heat till the gravy thickens and,sprinkle curry leaves and coconut oil ...
Serve with rice, and Enjoy!!!

Green Apple Pulissery /Apple Moru curry - Vishu Special Recipe
Vishu Special Green Apple Pulissery /Apple Moru curry 😊🍓🍒🍎🌻:
Ingredients:
Apple(Green or Red) - 1 no (I used green apple)
Curd - 1/2 cup(thick)
Green chili - 2 nos (cut lengthwise)
Turmeric powder - 1 tsp
Kashmir red chili powder - a pinch
Coconut - 1/2 cup
Cumin (jeerakam) - 1/4 tsp
Mustard seeds - 1/2 tsp
Shallots - 3 nos (Chopped)
Dry red chili - 2 nos
Coconut Oil - 1 tbsp
Curry leaves - Plenty
Salt to taste
Method of Preparation:
1. Wash and Peel Apple and cut into bite size pieces.
2. Heat a pan add Apple, green chili, turmeric powder,red chili ,with salt and 1/2 cup water. Cook till the Apple becomes tender and water is almost dried.
3. Grind together coconut and cumin with cup water to a smooth paste. Add ground coconut to buttermilk or whisked yogurt and mix well.
4.Add coconut yogurt mixture to cooked Apple and mix well. Stir continuously and Don't let it boil.
5. Heat oil in a pan and add mustard , dried red chili, shallots and curry leaves. Fry till the onion turns golden brown.
6. Add this to the moru curry and mix well.
Serve along with Rice and Pickle and Enjoy!!!

Golden Beets(Yellow Beetroot ) Stir fry Recipe
Golden Beets(Yellow Beetroot) Thoran Recipe:
Ingredients:
Golden Beetroots – 1 cups (finely chopped)
Grated Coconut - 1/4 cup
Shallots – 4 nos (finely chopped)
Cumin seeds - 1/4 tsp
Turmeric powder - 1/2 tsp
Garlic cloves - 1 no
Dried red chili - 2 nos
Green chilly- 1 chopped
Coconut oil- 1 tbsp
Mustard seeds- 1/4 tsp
Curry leaves- Plenty
Salt- to taste
Method of Preparation:
1.Wash and Remove the skin and grate beetroot finely.
2.Grind the coconut along with Turmeric,cumin seed,garlic cloves and keep it aside.
3.Heat coconut oil in a pan and splutter mustard seeds when it’s starts to splutter. add dried red chili,Shallots and curry leaves saute well .
4.Then add the beetroot and saute well for 5 mins.
5.Add Coconut mix and salt, Cook covered on medium flame by stirring occasionally until the beetroot becomes soft or completely cooked.
6. Remove the lid and Serve with Rice :)

Kerala Style Easy Pepper Chicken Recipe:
Ingredients
Chicken - 1 lb (I used boneless chicken)
Onion - 1/2 cup sliced
Green chilies - 2 nos
Ginger Garlic - 1 tsp (crushed)
Turmeric powder - 1/4 tsp
Kashmiri chili powder - 1/2 tsp
Coriander powder - 1/2 tsp
Garam masala - 1 tsp
Pepper powder - 1/2 tsp
Bay leaf - 1 large
Cloves - 2 nos
Cardamom - 1 no
Cinnamon stick - 2 medium
whole black peppercorns - 2 tbsp (Crushed)
Fennel Seeds - 1/2 tsp
Coconut oil - 3 tbsp
Curry Leaves - Plenty
Salt - to taste
Method of Preparation:
1.Heat an iron kadai add coconut oil. Add in the spices , sliced onions and green chilies. Let it saute on medium heat till light brown.
2.Add in the ginger and garlic, mix well for a minute. Add Kashmiri chilly powder, coriander powder, garam masala, and turmeric powder and salt. and combined well.
3.Add in the chicken. Mix well,until all pieces well coated with gravy. cover and cook.
4.Open the lid and add in the grind ed pepper powder,fennel seed and mix well.
5.Let the chicken dry roast on low flame for another 5 to 7 minutes or until it becomes blackish brown in color.
6.Sprinkle coconut oil and curry leaves if needed.and give a nice stir.
Serve nadan pepper chicken with rice.

Cabbage - Carrot Stir fry Recipe
Kerala style Cabbage - Carrot Thoran Recipe :
Ingredients:
Cabbage – 1/2 cup (Finely chopped)
Grated Carrots – 1/2 cup
Onion / Shallots – 1/ 4 cup
Grated Coconut – 1/2 Cup
Crushed Garlic – 3 cloves
Cumin seed (Jeera) – 1/4 tsp
Green chilies - 2 nos
Red Chilies – 3 nos
Urad dal - 1/2 tsp
Turmeric – 1/4 tsp
whole Pepper - 1/4 tsp (Crushed)
Salt – As Required
coconut Oil – 2 tbsp
Mustard Seeds – 1/2 tsp
Curry Leaves – Plenty
Method of Preparation:
1.Heat oil in a pan splutter mustard seeds then add urad dal and red chilies.
2.Add chopped onion ,green chilies and curry leaves. saute for a minutes.
3.Add the shredded cabbage and carrot along with salt. mix well and cook for 5 minutes.
4.Grind the coconut along with garlic,cumin seed,turmeric.
5.Next add the coconut mixture and combine everything together.
6.Combine them well and cook with the lid for about 3 minutes till cooked.
7.Remove the lid add crushed pepper and stir fry for another 2 minutes till dry.
8.Switch off the flame. Serve the carrot and cabbage thoran with boiled rice.
