Kerala style Cabbage - Carrot Thoran Recipe :
Ingredients:
Cabbage – 1/2 cup (Finely chopped)
Grated Carrots – 1/2 cup
Onion / Shallots – 1/ 4 cup
Grated Coconut – 1/2 Cup
Crushed Garlic – 3 cloves
Cumin seed (Jeera) – 1/4 tsp
Green chilies - 2 nos
Red Chilies – 3 nos
Urad dal - 1/2 tsp
Turmeric – 1/4 tsp
whole Pepper - 1/4 tsp (Crushed)
Salt – As Required
coconut Oil – 2 tbsp
Mustard Seeds – 1/2 tsp
Curry Leaves – Plenty
Method of Preparation:
1.Heat oil in a pan splutter mustard seeds then add urad dal and red chilies.
2.Add chopped onion ,green chilies and curry leaves. saute for a minutes.
3.Add the shredded cabbage and carrot along with salt. mix well and cook for 5 minutes.
4.Grind the coconut along with garlic,cumin seed,turmeric.
5.Next add the coconut mixture and combine everything together.
6.Combine them well and cook with the lid for about 3 minutes till cooked.
7.Remove the lid add crushed pepper and stir fry for another 2 minutes till dry.
8.Switch off the flame. Serve the carrot and cabbage thoran with boiled rice.
