Nadan Kozhi Varuthathu  / Chicken fry  Recipe – Kerala Style Chicken Fry Recipe




Ingredients:

Organic Chicken drumsticks - 1 lb
Oil-as required

For Masala paste:

Kashmiri chili powder-2 tsp
Turmeric powder-1/4 tsp
Fennel seeds -  1 tsp
Black pepper - 1 tsp
Chilli pepper  -  2 nos 
Ginger garlic paste - 2 tbsp
Vinegar-1 tsp
Water-as required
Salt-to taste

Method of Preparation:

1.In a blender,grind all the masala in a  smooth paste.




2.Rub this onto the chicken pieces and refrigerate for about  3 hour.



3. Heat oil in a pan and add the  chicken pieces fry until golden brown color.






4.Then fry chili peppers , pinch of Fennel seeds and curry leaves,  until it turns golden brown and pour into the fried chicken pieces.



Serve with chapathi / Naan... And Enjoy!!!!

Pineapple - Coconut Ladoo Recipe

Pineapple - Coconut Ladoo Recipe:




 Ingredients:

Pineapple - 1 1/2 cups ( Finely chopped)
Grated  coconut -  1 cup
Sugar -  3/4 cup
Cardamom powder -  1/4 tsp
Raisins - 3 tbsp
Ghee - 1 tsp
salt - a pinch

Method of Preparation:

1.Grind the pineapple chunks into a paste.


2.In a pan,add the chopped pineapple along with coconut,sugar and salt.cook until it turns to soft.


3.Add ghee and  cardamom powder and stir well.


4.When the mixture starts getting thick, stir well in low flame .
5.Then remove from the heat, keep it aside until they are warm enough to handle.


6.Make small balls of the mixture into ladoo shape with greased hands.


Garnish with Raisins ....

Kadalaparippu Payasam (Kadala payasam) Kerala Recipe

Kadalaparippu Payasam  Vishu Special Recipe:




Ingredients:

Chana dal or Kadala parippu- 1 cup (160 ml)
Jaggery- 250 gm 
Thin Coconut milk- 2 cups
Thick coconut milk- 1 cup
Whole Cardamom crushed- 1 tsp
Cashew nuts/Raisins (roasted) - 1/4 cup
Coconut slices(roasted) - 1/4 cup
Ghee- 3 tbsp


Method of Preparation:

1.Wash and drain chana dal(kadala parippu) and keep it aside for 1 hour. 



2.In a pressure cooker,add ghee and roast well.



3.Then add chana dal along with 2 cups water till 2 to 3 whistles or till chana dal has cooked well.



4.Place a saucepan over medium low heat, combine jaggery with water and let the jaggery dissolve in water completely. Keep aside the melted jaggery.
5.Open the cooker lid Mash the chana dal  Do not mash it to a very smooth paste.



6.Place a large non-stick pan over medium heat.Add ghee, add the mashed chana dal to the ghee and saute for a few minutes till all the water dries off.



7.Add the melted jaggery little by little and keep stirring till jaggery has combined well into the chana dal.and add cardamom powder.




8.Add the thin coconut milk, keep stirring, lower the heat to low and cook till the mixture has slightly thickened.
9.Add, the thick coconut milk, combine well and cook for a couple of minutes, do not boil it.
10.Finally, add the roasted cashew nuts and coconut slices, combine well.




 11.Switch off the flame and Serve with Vishu Sadhya and Enjoy!!!

Poori Recipe / Puffy Poori –  Breakfast Recipes:





Ingredients : 

Wheat Flour : 2 cups
Rava /Semolina : 2 tbsp
Maida - 2 tsp
Hot water : 1  cup
Oil : 1 tsp
Salt :to taste
Oil  for frying 

Method of Preparation:

1.In a large bowl,take flour, mix along with rava,maida,oil and salt.



2.Then Add little by little Warm water and knead well for few minutes until make it a soft dough.
3.Then cover and allow the dough to rest for about 30 minutes.



4.Make small lemon sized balls out of the dough and Roll the balls into round shape.







5.Heat the oil in a  wok when oil is hot add slowly slide the poori from the side of the pot into the hot oil . (Make it Medium to high flame)




6. Deep-fry the poori until golden brown. When it puffs up, turn it once on the other side. 



7.Fry for a minute and remove.



8. Drain it into a kitchen tissue.



   Serve hot with with Potato masala (Poori bhaji) .....

Chicken Fried Rice Recipe

Chicken Fried Rice Recipe :






Ingredients:

Jasmin Rice -  1 cup(Cooked)
Chicken breasts (cooked and shredded) - 1 lb
Eggs - 3 lightly beaten
Sesame oil - 1 tbsp
Butter- 1 cubed
Ginger/Garlic - 1 tbsp(Chopped)
white onion - 1 small(chopped)
carrots - 1/2 cup(Chopped)
Cabbage - 1/4 cup(Chopped)
soy sauce - 1  tbsp
Green chili sauce - 1/2 tsp
Spring onion - 2 tbsp (Chopped)
Pepper powder - 1 tsp
Salt to taste

Method of Preparation:

1.Cook and shred the chicken along with crushed pepper powder and salt. 



2.Heat wok to medium heat, Pour sesame oil along with  onion ,ginger/garlic ,cabbage and carrots and fry until tender.


3.Mean while in another pan  add butter when its melted add the beaten eggs along with pepper and salt Using a spatula, scramble it. 




4.Once cooked, mix the eggs with the vegetable mix well.then add shredded chicken pieces and mix well until combined. 



5.Then add the cooked rice and chicken to the veggie and egg mixture ,soy sauce and green chilli sauce on it.


6.Stir and fry rice and veggie mixture until heated through and combined. Add chopped green onions if desired.



Serve hot ....
