Mulaku Bajji(Chilli Bajji)
Mulaku Bajji(Chilli Bajji)
Ingredients:
Bajji Mulaku(Long green chillies) - 4 nos
Gramflour- 1 cup
Chillypowder- 1 pinch
Baking soda - 1 pinch
Salt- As reqd
Oil for deep frying
Method of Preparation:
1)Clean the chillies. Cut into half, take out the seeds inside.
2)Mix together besan flour with salt, chilli powder and pinch of baking soda to dosa batter consistency.
3)Put the chilles in it for marination for 10 mins.
4)Take them out and dip them in the besan batter.
5)Deep fry in hot oil.
Serve with coffee :)

Strawberry Mint Lemonide
Ingredients:
strawberries-1 cup
water-2 cups
sugar-1 cup
freshly squeezed lemon juice-2 cups
fresh mint-large bunch
1/2 lemon sliced thin
Method of Preparation:
1)In a blender, blend strawberries with 1 cup of water until smooth, set aside.
2)In a small sauce pan combine sugar and remaining 1 cup of water.
3)Bring to a boil, stirring until sugar is disolved and mixture turns to a syrup, set aside to cool.
4)In a pitcher combine strawberry puree, lemon juice and cooled sugar syrup.
5)Add enough sparkling or stilled water as needed to achieve desired constancy and taste. (the more water the less tart a taste)
6)Add fresh mint and lemon slices to the pitcher and using a wooden spoon, stir to combine.
7)Serve chilled in glasses filled with ice and fresh mint.

Bhatura Recipe
Punjabi Bhatura Recipe
Ingredients:
Allpurposeflour(Maida) - 4 1/2 cups
Baking powder - 1 tsp
Curd - 1 cup
Water - As reqd
Sugar- 2 tbsp
Soochi(Rava)-1 cup
Salt- 1 1/2 tsp
Oil for frying
Method of Preparation:
1)Sieve maida with baking powder, salt and Soochi.
2)In a cup, mix sugar in the curd.
3)Slowly, add it to the maida.
4)Add reqd water and 2 tbsp of oil and mix well.
5)Cover with a wet cloth and keep aside for 2 hours.
6)Make small balls and keep it again for 10 mins.
7)Roll them out into pooris.
8)Deep fry in hot oil.
9)Take it onto an absorbent paper to remove the excess oil.
:- Serve hot with chole.

Garlic Chicken Recipe
ingredients:
Chicken-½ Kg
Garlic Crushed -15 nos
Green Chillies Cut in to strips -2 nos.
Onion Finely Chopped - 2nos.
Tamato-1 nos
Dried Red Chilli - 10 nos.
Coriander powder-1 tbsp
Curry Leaves 2
Coriander Leaves 2
Oil 2 tbsp
Salt to taste ½ tsp
Method of Preparation:
1) Peel and chop garlic to small pieces.
2)Heat a pan with 2 tbsp oil. Fry in the garlic, dried red chillies,and coriander powder. garlic till light brown.
3) Grind the above masala in fine paste.
4)Heat oil in a pan Add in onion,tomato and some curry leaves.onion till brown. Mix well for some time.
5)Then add in the above paste. Allow it to cook for 2 minutes in low flame.
6)Add the chicken pieces and combine well.cook for 15 mints
7) Turn off flame and sprinkle freshly sliced coriander leaves.
8) Transfer it to serving plate & enjoy the hot & spicy Garlic Chicken.

Evening Snacks DHOKLA
Ingredients:
Bengal gram flour (besan)-500gms
ENO powder-2 tbsp
ginger paste-1 tsp
sugar- 2 tsps
lemon juice-1 tsp
baking soda-2 tsps
Salt to taste
For tempering:
canola oil-2 tbsps
black mustard seeds-1 tsp
curry leaves-6-8 pinchu
green chillies slit lengthwise-2
Method of Preparation:
1) Sieve the gram flour. Mix it with the water and 1tsp oil keep aside for 2 hours.
2) Add the ENO, ginger, and salt to taste, lime juice,baking soda and sugar to make a batter of pouring consistency. Mix well.
3)Pour batter into baking tray greased with oil.Steam on high flame for 15 mins.
4)If pressure cooker is used,do not apply weight/whistle.
5)Remove and allow to cool for 10 mins& cut into cubes.
To temper,
6)Heat 2 tbsp oil.add 1 tbs muster seeds and uruddhal,when crackling add curry leaves and green chillies,then put off the flame.
7) spread evenly over Dhokla pancake.
8)Serve with Green chutney.

Egg Kabab Recipe
Egg Kabab Recipe:
Ingredients:
Boiled Egg-2
Onion- 1 no
Beat root-1 nos
Potato(mashed)- 2 nos
Chilies - 2 nos
Ginger Garlic Paste-1 tsp
Coriander Leaves-a small bunch
Salt- As reqd
Turmeric Powder-1/2 tsp
Pepper Powder-1 tsp
Garam Masala - 1 tsp
Oil - As reqd
Eggs or All purpose flour(Maida)
Bread crumbs-1 cup
Method of Preparation:
1. Cut the boiled eggs into thin slices in vertically pieces.
2.Heat oil in a pan and shallow fry onion until transparent.
3.Add garam masala, Turmeric powder pepper powder, green chili, ginger garlic paste, curry leaves, and salt. mix well .
4.. Add boiled potatoes and Beatroot and mix well .keep it aside for 10 mins.
5 .Shape each portion into elongated balls with egg and keep it aside.
6 . Dip in beated eggs or a mixture of flour and water (for the vegetarians).
7 .Roll the balls in bread crumbs.
8. Fry in heated oil till golden brown. Fry kababs one by one until crisp and golden brown.
